amd now, because it's 3:38am, and I'm having a hypo-glycemic episode and sitting here waiting for my peanut-butter & honey sandwich to kick in, here is the recipe for Lashbears Infallible Scramble.
take a Pyrex measuring jug of 2 cup size.
Crack 2 eggs in
add a little salt and pepper
whisk lightly with a fork.
Take one of the eggshell halves
fill it with half and half or cream, pour into the jug. Repeat (
the rule here is one half eggshell full of cream/half and half per egg)
Beat mixture with fork until all incorporated.
Now, to cook (Alex knows this part well)
Put in Microwave for 30 sec.
Stir well.
Put in for another 15 sec
Stir well.
Put in for another 10 sec
Stir well.
The eggs should be at a lovely creamy cooked scramble stage by now. Yummy.
Do
not attempt to cook the eggs all the way through as the last part will cook while you are stirring them. I promise.
PLEASE Do not overcook or the eggs will go dry and the liquid will separate out from them. If you cook dry eggs, then the angels will weep for you.
