| lost in the fog |  What's for Dessert? Not sure why I am into sharing recipes now as well as photographing my culinary progress, but here goes nothing. Super Easy (and fast) Chocolate Mousse 1/2 pound dark chocolate ** 2 eggs 1/2 c. milk 1/2 c. cream or 1 cup h/half knob of butter (about a tablespoon and a half) vanilla to taste a little salt ** Note re chocolate, semi sweet or bitter, if using bitter sugar must be added, I used TJ's 70% (red package), no sugar added. Shave chocolate very fine (use a serrated knife, works best) and put in the blender w/eggs. Blend briefly to mix. Add vanilla and butter and grind or two of salt (I learned that from Julia Child, same with hot chocolate, add a little salt, makes all the diff in the world in the flavor, trust me on this). Heat 1 cup of milk/cream/half and half to the point of scalded (as you would for making custard. Turn the blender on low and through the lid begin slowly adding the milk/cream in a steady stream, then cover the blender and process for a good 2-3 minutes on medium high speed. You might need to scrape down the sides of the blender. Pour into cups and refrigerate until set. | lost in the fog | Well, Susan IS a Domestic Goddess and I mean this as the highest compliment, the little bit of her cooking I've been able to sample.  A level I can aspire to, but will never quite reach, let alone surpass. The mousse has set nicely, just waiting for it to be completely cool as my after dinner treat tonight. |
