Speaking as someone who doesn't really know, I've always figured that being a lesbian was as much about the emotional attraction to females as the physical.

That, and I could go for a night of (good) oral just about any old time and I'd be a pleased woman. Maybe that's why I've always been open to the possibility of a female partner, even if it's not happened and I have a preference for males and their genitalia. I've been fairly blessed in the receiving department.
