				     | As you all know a potato salad is anything you what is add to make it your own.  Some use hard boiled eggs, celery, onions, you can make it your own.  I got this recipe from my dog sitter many moons ago.  Her recipe has changed, but I have stuck to the BACON part. This recipe is all about your taste. If you want a BBQ bacon potato salad, use the hickory bacon, if you want a brunch potato salad use the maple bacon. I boil the potatos the day before and refrigerate over night. BACON POTATO SALAD RECIPE: 1 pound of bacon 3-5 pounds of rose potatos or red skinned potatos black olived sliced small can (if you don't like, not add) small sweet pickles about 5-7 (you can use dill) sweet pickle juice to help thin out mayo about 1/8 cup or less (if using dill use dill juice) mayo (two or three heaping big spoonsfull) just enough to combine mustard just enough to use for coloring (you don't want mustard salad unless you like mustard) pepper as much as you like Insturction: Boil the potatos until fork tender, cool potatos with cold water, cut into cubes, refrige into cold. Fry the bacon until your liking, let cool, cut in pieces or crumble. Put potatos, bacon, olives, sweet pickles is large mixing bowl, and mix to combine. Add mayo, mustard, and pepper. If salad is to dry, add pickle juice. NOTE: It is all about your taste, do you like more mayo, mustard, or pepper? add more Enjoy!!!!! Try it out, and please let me know what you thing.
