| 8/30/14 - Disneyland -10k or Bust. | I had a Subway sammy with Bacon for lunch.  In the bacon world, subway's bacon is the equivalent of New Jersey (and I'm not talking the pretty parts).

| lost in the fog | I love bacon, I love Mexican food.  That is the problem, there is no bacon in mexican food.  Not even carnitas, lots of pig in Mexican food, but still no bacon.

 I bought, at my local Jon's mkt last night, smoked pork bellies, otk as Russian style bacon. I was looking for uncured pork bellies, but I took what was available. I sliced me a big fat slice and put it in the skillet, I took some cubes and baked them in the oven. The skillet slice was the thickest piece of bacon you ever saw, and pretty delicious. The baked cubes I paired with some homemade dippin' sauces - apricot soy, blackberry, bbq. I found out where "pork rinds" come from, that's the bit that needs to be trimmed off, but I didn't. Other than that, it was an interesting experiment, and I'm all the more interested in finding unsmoked pork bellies. This is a food with excellent win potential!
