How about scalloped potatoes and ham, ham & swiss quiche, ham and bean soup,hashbrowns with ham thrown in with a little onions and peppers is divine or a cold ham & pasta salad.

Mmmm...

Here's what I ended up with. I have a chicken pot pie recipe that is not exactly traditional - it's the filling, in a casserole pot, topped by biscuit dough. Well, anyway, I used that as the base recipe, but instead of the original veggies (peas & carrots), I subbed in a bag of frozen "stew vegetables" (celery, carrots, potatoes), then instead of rosemary biscuits on top, I made it as cheesy biscuits (to go with the ham, you see). I'll let you know how it came out.
