Absolutely I would. They're comfy, don't take up much space, and can come in handy. I'm with Moonliner on the gloves and socks- extremities must stay warm. I've never been a fan of hats, and I generally live with getting cold.
Sounds like your existing jacket will be fine, but good boots or shoes might be in order. Definitely gloves; don't know that you need waterproof. Well, maybe if you're planning a snowball fight. Have a smooth trip!
