How about a build-your-own baked potato bar with shredded cheese, chopped bacon, green onions, sour cream, salsa, butter...

Alton Brown has the *perfect* baked potato method IMHO.

A lot of those same ingredients could go on tortilla chips as nachos later. Maybe add some refried beans, jalapenos, olives...
