This weekend I filled chicken cutlets with ham and fresh proscuitto wrapped mozzarella, rolled them up and then......wrapped bacon around them! The boy and I thought they were divine!

I finally had bacon and Chocolate! :snap:
I bought a "Mo's Bacon Bar" with Applewood smoked bacon, Alderwood smoked salt, in a deep milk chocolate (45% cocao). The salted chocolate was nice, adding a little crunch, and the flavor was nice, with just a hint of smokiness.

Psh - pork fat can be (nay - should be) used for all sorts of things.
For example, you cook some bacon in a pan. Where do you cook the over easy eggs? That's right - in the pan with the bacon fat.
Refried beans - the best ones ever - pork fat.
I hear you can make great pie dough with it and pop popcorn in it.

They just don't SOUND good, but they TASTE good!
Yes, the ends are just that, they are the ends that get cut off so the bacon fits into the package neatly. If you can find them in the store, they are quite economical if you plan to use them as lardones in a dish. They are usually a bit fattier than regular bacon, but when I'm rendering (there's that word again :D ) to start a cassulette, they work great!

Gary had a burger yesterday from the Ram and it had chicken fried bacon on it. He broke off a little for me and it was divine. I'm sure it's horrible for you but it was so good. I said next time I would just like a cup of cheese beer soup and a plate of that bacon!

I've got a recipe for roasted tomato soup with a cheddar crouton on top (like french onion soup but a riff on grilled cheese and tomato soup). I'm imagining that with some bacon sprinkled on top and thinking winner winner tomato soup dinner.
Except it's too hot for soup for dinner when it's still 100 during the day.

I've been to local buthers, and can't find the caul fat I need for a recipe I want to do for Thanksgiving. I only need 1 1/2 lbs. I can order a frozen 10 lb box online which will tripple the cost of the meal, but I don't really want to do that.
The recipe is a sausage and mushroom stuffed turkey breast, rolled up into a log, and wrapped in.....
You guessed it, BACON! :D The caul fat is used to help hold the bacon on and make a nice neat log shape. It melts away to add it's pork fat delishisness to the outside while it's browning in the pan before it goes in the oven. It's not absolutely needed, but prefered.
If anyone knows of a place in the Orange County area where I might obtain such a rare delight, please let me know. Thanks!

I couldn't find Caul fat. I just used extra bacon to wrap my turkey breast with on Thanksgiving. It was very yummy!

We've made something similar but stuff with an almond. I think you also sprinkle a little brown sugar with cayenne pepper too. I'll have to try it with a different filling.

I can't cook the stuff because of that. I start looking at it too closely and then I can't eat it. Occasionally though, my husband will make it as breakfast burritos with eggs, potatoes and cheese and then? It's pretty darn good... as long as I don't look at it too closely and think about it too much. heh.

I hear ya! The stuff tastes great, but mostly because of the spices they add. So, I tried Soyrizo once. It's vegan, using soy in place of piggy face parts and using the same spices. The flavor was good, but the texture was a little wierd. But in a burrioto with eggs and cheese with black beans, you hardly noticed. I suppose I could get a chorizo recipe, and sub out the meat with something else slightly more palatable.

I like the idea of those - but the bacon is never done enough. I hate chewy fat on bacon. I want it pretty crispy. Same issue with those bacon covered, stuffed jalepenos and such. I've wondered if I may have better results if I parboiled the bacon first.

If you've made soup you know to add the flour, make Roux, before you add the potatoes, usually use more flour too. I also have to use a lot more chicken broth to cover the potatoes, I've found TJ's to be the best. I just use kitchen shears on the Bacon much easier than rough chopping frozen bacon.
It's even better the second day too!

Yeah, I found that to be a bit much too, so I actually use half the cream and twice the chicken broth.

Today I watched an Iron chef showdown where they show bits from past shows. This one was called "Show me the bacon". It was great, though ham and suckling pig are hardly bacon in my book. One chef made funnel cake fried in pork fat and topped it off with powdered pork fat. Mmmmm, powdered lard!

I know exactly what you mean. sadly, I will have to say it is fast foodish bacon, but not in an overwhelming way like many places. Im sure that has a lot to do with it being in a shake form, but none the less. it wasnt the worst bacon 'thing' Ive consumed on a whim. I think that (dis)honor falls to bacon gum or maybe gummy bacon. I forget which. I only recall that both were vile.

I had a maple bacon shake at Slater's 50/50 (http://www.slaters5050.com/) one time. It tasted like a vanilla shake with about a cup of maple syrup mixed in. I.e., not bacony at all and WAY too much maple. They offered to remake it with less maple. The second one had a nice balance of maply sweetness, but it still lacked any kind of bacon overtone.
A while back Jack in the Box had a limited-edition bacon shake which I rather liked.

This may take some experimenting, but I would take a regular cheesecake recipe and do the following:
Render out 0.5 Kg bacon (that's metric for about a pound). Save the fat, crumble half of the chilled bacon until fine in a food prcessor. Eat the other half while warm :D
Run the warm (not hot) bacon fat through cheese cloth to clarify it. Add some to the recipe for the cheesecake, replacing some of the fat in the recipe (butter or cream cheese). I would guess 1/3 to 1/2 cup- but not sure.
Add some of the fine bacon crumbles to the graham cracker crust recipe.
For the cream garnish, take a butter cream recipe, add cold bacon fat in place of half of the butter, and add bouron to taste (use I'd start with about a tablespoon).

My favorite way to eat bacon is as a plain ol' piece of bacon. Cooked in a skillet or the oven. Microwaved as a last resort or if I'm feeling lazy and short on time - which is unlikely I'm cooking bacon at that point anyway.

Well, even if it's hogwash, I just bought 2 packs of bacon for the freezer. One can really not have too much in reserve.
