Huh - bacon wrapped around a french toast stick... never thought about that before... both are good with maple... nice sweet and salty and even worse for you so it must be really good quality to it. Perhaps I'll have to make some version of that sometime.

I'm going to briefly invade the bacon thread with sausage. I recently made a breakfast sandwich with buttermilk biscuits (grands from a can), an overeasy egg - over medium is probably a better description as the egg yolk was thick but not hard - and some jimmy dean sausage flattened out thin with a little salt and pepper on the egg. Sausage biscuit with a not-scambled egg was really really a step above over the same dish scrambled.
You may now return to the regular bacon thread.
I looked up bacon stuff and came across recipes for bacon candy. Seems like I've heard off that somewhere around here?
Was it with brown sugar only or with spices added to it? Thin cut bacon or thick? MMmmmm... I think i may have to try that.

The appearance is a little off to me somehow but I'm betting it's still very tasty. It does have bacon in it, after all.

Wait. Hear me out. Even if you don't agree that mini cabbages will ever hold a candle to cured pork, you must admit that Brussels sprouts, like bacon before them, are the latest chic ingredient. Many restaurants are now serving them up tapas style, garnished with fresh thyme or sautéed lardoons.
So okay. Maybe Brussels sprouts aren't the new bacon, but they're certainly bacon's new best friend.

Heather's brother Andy came down on Thursday night with his family in tow for a little hanging out and a lot of Disneyland. Last night, we went to "Home," our local eatery, for a dinner. Oskar, our 7-month-old nephew, was staring at the food longingly (he still has no teeth). On impulse, Andy took a strip of bacon from his burger and offered it to Oskar, who started nursing on it. He was absolutely pacified. We start 'em young in our family.

This is not entirely true - if you count salchichas. And I do.
I bought, at my local Jon's mkt last night, smoked pork bellies, otk as Russian style bacon. I was looking for uncured pork bellies, but I took what was available. I sliced me a big fat slice and put it in the skillet, I took some cubes and baked them in the oven. The skillet slice was the thickest piece of bacon you ever saw, and pretty delicious. The baked cubes I paired with some homemade dippin' sauces - apricot soy, blackberry, bbq. I found out where "pork rinds" come from, that's the bit that needs to be trimmed off, but I didn't. Other than that, it was an interesting experiment, and I'm all the more interested in finding unsmoked pork bellies. This is a food with excellent win potential!

It is high time that we here in the bacon thread take a few moments to recognize the accomplishments of Bacon's first cousin: Beef Jerky (http://www.ehow.com/how_2048786_great-beef-jerky.html).

Sure it's technically not a cured pork product but done right it is pretty darn good and has many similarities.
I picked up a few packs of very tasty high quality Beef Jerky during my recent visit to pikes place market. I'm having to carefully ration them to prevent a full on carnivorous feeding frenzy.

They don't take any advertising - and they tell step by step how they came up with the results they show - for food, recipes, or kitchen gadgets.

Staff members at the office of House Minority Leader John Boehner (BAY'-nur) became concerned Monday after finding an envelope leaking an oily substance. Police evacuated several buildings before determining the package postmarked from Georgia contained bacon.
A note was included with the bacon, but police didn't commenting on its contents.
Boehner was not in the office.
A spokeswoman says it's ironic someone would send Boehner bacon because he has spent his career fighting pork-barrel spending. He's one of the few members of Congress who shuns earmarks, those home-district projects sought by lawmakers.
However, the Republican has drawn criticism for voting for a $700 billion financial bailout bill that critics say was loaded with pork.

Poached Oysters, Braised Bacon and Cabbage with Kimchi Cream

Ingredients:
Braised Bacon:

½ cup chopped leek
1 celery rib, chopped
10 parsley stems
10 white peppercorns
1 pint chicken stock
½ pound slab bacon
Kimchi Cream:
1quart heavy cream
3 tablespoon kimchi paste
Braised Cabbage:
1 head green cabbage, chopped
1 pt kimchi cream
Pomme Maxim:
1 russet potato
1 teaspoon clarified butter
1 cup parsley leaves
To Assemble and Serve:
12 oysters (preferably Blue Point), liquor reserved
2 ounces braised bacon (from above)
½ cup braised cabbage (from above)
1 pint kimchi cream (from above)
12 pomme maxim (from above)
Chili oilMethod:
For the Bacon:
Preheat oven to 200ºF. Sweat the chopped onion, leek, and celery over medium heat until sweet and translucent, but not colored, and season with salt. Add parsley stems and peppercorns and deglaze with chicken stock. Add bacon and cover with parchment paper and a lid; if necessary, add water until bacon is just covered. Place the pot in oven and roast for 3 hours, until bacon is fork-tender.
For the Kimchi Cream:
Combine cream and kimchi paste in a saucepot and reduce by a third. Season with salt if necessary.
For the Braised Cabbage:
Blanch the cabbage in boiling salted water for thirty seconds. Remove the cabbage and place in a pot of warm kimchi cream. Cover pot’s contents with a piece of parchment paper or wax paper (to keep the heat in and let the steam out), and braise until tender.
For the Pommes Maxim:
Preheat oven to 260ºF. Trim the potato into a long rectangle. Use a mandolin to slice 1/16-inch thick slices. Brush a silpat with a very minute amount of clarified butter. Place one potato square on the silpat. Place one parsley leaf in the center of the potato. Place another potato square on top of the parsley. Brush a very minute amount of clarified butter onto a second silpat and place it (butter-side down) on top of the potato squares. Sandwich these silpats between two flat half sheet trays and bake for thirty minutes.
To Assemble and Serve:
Fill three small sauce pots half-way with kimchi cream. Place the cabbage in one, the bacon in another and the freshly shucked oysters in the third. Gently heat all three to warm: the cabbage will become tenderer, the bacon will warm infuse with extra creaminess, and the oysters will become slightly firm and noticeably plump. Strain each, but reserve the cream from the oyster pot to use as the sauce. Adjust consistency with oyster liquor, if necessary. Arrange the cabbage, bacon, and oyster on the plate. Garnish with 3 pomme maxim, sauce, and a dot of chili oil.

Recent episode of Diners, Drive-Ins, and Dives (well, not so recent when you watch it as often as I do) showed a diner that did a bacon bourbon... I'm hoping to try it one day... with a crowd that might enjoy it as much as we do. ;)

The one I am thinking of has a course-textured surface which is not conducive to decals (this is the same machine Susan has). All of the decals on Amazon (referring back to Morrigoon's post as well as the link above), would not work on this type of surface.

If you're like me and have a lot, use it in a panzanella. For a twist on the Italian bread salad, toast cubes of stale bread in bacon grease with a few cloves of garlic until well-browned. With tomatoes out of season, combine canned crushed ones with sherry vinegar and bacon grease for a chunky vinaigrette. Mix the toasted bread with some thinly sliced onion, niçoise olives, fresh oregano and basil.
Soak the mixture in the vinaigrette until the bread is crisp-tender. Just before serving, toss in some tart, bitter lettuces -- frisée, mâche and radicchio -- for a little zing and a lot of color. Serve each portion with crumbled bacon and a drizzle of reserved vinaigrette.

My husband requested beef burgandy last night. I was pleasantly surprised to find it had bacon in it. I enjoyed it very much, even the boy liked it!
Sadly my husband is requesting something called porcupine meatballs tonight and it doesn't look near as appetizing. Maybe the boy and I will just have leftover beef burgandy!
I'll be really happy when the husband goes back to work and doesn't have so much free time to tell me how to do my job of taking care of my family!

I like the bacon martini recipe from that article:
Serve the candied bacon on its own or as a cocktail garnish. Place some vodka and Applejack brandy in a shaker, with just a touch of amaretto and maple syrup. Shake with ice and pour into a chilled martini glass. Garnish with the candied bacon and a thin slice of apple (we do have to be somewhat healthful). Voilà. A candied bacon martini.

My husbands Mom didn't ever cook the meatballs first and the sauce is cream of mushroom soup. It never looked appetizing to me and sometimes your meatball isn't cooked through!

These little piggies don't appear to have been made of any meat. I imagine that they had great difficulty building themselves little houses made of straw, sticks or bricks (check the regulations regarding the latter - 12792 is the current brick count for BBQs/fireplaces - for one family of piglets).
They are like haggis - every part of the sheep except for the meat. I'm only commenting because Stoats like meat with meat attached.
Having said this, please save me some in an air-tight jar for 74 days, and I'll try it all the same...

Sadly my husband is requesting something called porcupine meatballs tonight and it doesn't look near as appetizing.
Porcupine balls are gross. Another recipe that hopefully passed along with my Mother.
My husbands Mom didn't ever cook the meatballs first and the sauce is cream of mushroom soup. It never looked appetizing to me and sometimes your meatball isn't cooked through!
OK, Bear to the rescue.
I present:
Crock Pot Porcupines With BACON !! (a favourite of mine)
Porcupines:
1 pound lean ground beef
1/2 pound lean pork
1/2 pound bacon, minced or really finely chopped
1 beaten egg
1/2 c. milk
1 c. rice (raw)
1 sml onion, chopped very fine
1 Tsp. salt
1 Tsp mixed herbs (or italian herbs)
1 Tsp Cracked Black Pepper
Sauce:
2 1/2 Cups chopped tomatoes
1 Chopped red bell pepper
1 1/2 cups water or broth
1 Large chopped onion
1 tsp. salt
1 tsp. dried basil (or a good couple sprigs of fresh)
1/2 Tsp Oregano
2 Bay leaves
METHOD:
Combine all meats; add egg, milk, rice and salt.
Form into 1 1/2 inch balls; brown in a large skillet sprayed with non-stick cooking spray or add a little oil to the skillet.
Combine tomatoes, water, onion, salt, basil and bay leaves in Crock Pot.
Drain excess grease from meatballs and add to sauce mixture.
Cover and cook for 7-8 hours on low.Serves 6.

Yes, if you have a grinder / processer you can grind all three together to make it easier! (I have a hand-cranked old-fashioned meat grinder that really builds up the biceps....)
...and Stoat, remember Porcupines are only legal [juicy and] tender in the UK, and only if you're of Gypsy descent.

Zacky and I have been eating BLT's a lot lately. With veggie bacon, of course. You'd be surprised how close to real bacon Morning Star Veggie Bacon tastes. The sandwich goes like this: healthy bread, safflower oil mayonnaise, avocado, veggie bacon, salt and pepper, lettuce, deli mustard, healthy bread. So good!

I just watched an episode of Anthony Bourdain's show, in which he went to New Zealand and helped slaughter a wild boar, whereupon he turned it into a tasty looking pork dish. At one point in the episode, he was shown eating a meat pie made with possum. His remark - "Mmmm, it's possumy." Somehow, I'm not too tempted.

We did this at the last game night! And the only reason I thought of it was that I had been reading an interview with Caroline Kennedy in which it mentioned her eating such a sandwich. They're yummy! Now I want one for dinner.

Had gator (tasted like the breading it was coated in), elk, venison, and antelope. Nothing terribly odd. And pheasant. My family hunted when I was a kid.
All of it would be better with bacon. :)
