I'm going to guess that the bacon wouldn't be done enough for me. I don't really like floppy bacon...

We used to put bacon wrapped tomatoes on skewers with meat and other stuff and I don't much care for tomatoes or the not crispy bacon but they were still pretty good.

I wonder if blanching the bacon or cooking it a little first in a pan would make any difference.

I also want to make waffles with crumbled bacon in them.

Betty, you probably could do that. I find bacon in the oven cooks up in about 10 minutes to crispier than I like (but I like mine soft) so perhaps 5-6 minutes of pre-bake followed by wrapping on the corn, if it's not too hot to touch. However you may lose a lot of good bacony juices that way which would otherwise bacon up the corn.

"bacon up the corn" sound dirty. "Hey, Baby, how'd you like to come back to my place and bacon up the corn?"

Sigh, I'm putting this in spoiler tags because it's somewhat contrary to the spirit of this thread, but it's an important note about bacon.

The intro to this (http://www.time.com/time/health/article/0,8599,1917458,00.html) very fine but disturbing article on the health crisis in America:

Somewhere in Iowa, a pig is being raised in a confined pen, packed in so tightly with other swine that their curly tails have been chopped off so they won't bite one another. To prevent him from getting sick in such close quarters, he is dosed with antibiotics. The waste produced by the pig and his thousands of pen mates on the factory farm where they live goes into manure lagoons that blanket neighboring communities with air pollution and a stomach-churning stench. He's fed on American corn that was grown with the help of government subsidies and millions of tons of chemical fertilizer. When the pig is slaughtered, at about 5 months of age, he'll become sausage or bacon that will sell cheap, feeding an American addiction to meat that has contributed to an obesity epidemic currently afflicting more than two-thirds of the population. And when the rains come, the excess fertilizer that coaxed so much corn from the ground will be washed into the Mississippi River and down into the Gulf of Mexico, where it will help kill fish for miles and miles around. That's the state of your bacon — circa 2009.

It was kind of funny because she doesn't really bake but when she found out her son prefered store bought cupcakes she started experimenting. She put dried banana chips in a yellow cake and topped them with a banana chip. The bacon were a white cake with bacon pieces baked in and topped with a piece of bacon. I guess there were some that had both bacon and banana but I don't eat bananas.

The annual Los Angeles County Fair, which ended last weekend, included pig races throughout the day. The cute pig races were sponsored by Ralphs Supermarkets, which had banners posted around the area saying: "Bring Home The Bacon!" After each race, which also included duck races, too, spectators were given coupons for free packages of bacon at Ralphs. Who doesn't love free bacon?! :D

Full recipe.

4 lbs chuck roast
1 small onion, diced
2 stalks celery, diced
2 carrots, diced
1/2 lbs bacon
1 Tblsp ground corriander
1 tsp ground savory
1 can tomato sauce (no salt added)
1 can diced tomatoes (no salt added)
1 cup red wine
1 Tblsp olive oil
4 cloves garlic, crushed
salt
pepper
cumin
beef or vegetable broth (optional)

1. Rub all sides of roast with salt, pepper, and cumin
2. Heat olive oil in pot over high heat. Sear all sides of the roast and remove from pot.
3. Wrap bacon around seared roast (setting aside 2 or 3 slices) and sear again, removing from pot afterwards
4. Chop the slices of bacon you had set aside. Add the chopped bits to the hot pot and cook until fat starts to render
5. Add onions, carrots, celery, garlic, coriander, savory, salt & pepper to taste. Cook over med-high until the veggies get soft
6. Add wine, tomato sauce, tomatoes. Stir and bring to boil
7. Add bacon-wrapped roast to pot, making sure the liquid mostly covers the roast. If there isn't enough liquid, add more wine and/or some broth to cover.
8. Turn heat down to a fast simmer. Cover and let simmer for an hour.
9. After an hour, reduce heat further, try to get it down to just under a simmer. Cover for at least 2 more hours, the longer the better.

Recipe to share, copied from the email, with personal tips at the end;

Loaded Baked Potato Cheese Soup
Yield: six 8-oz portions

Ingredients:
4 large Russet Potatoes (peeled and small diced)
4 med Red Potatoes (small diced)
6 oz (2 large stalks) Celery (small diced)
6 oz (1 large or 2 small) Carrots (peeled and small diced)
1 med yellow Onion (small diced)
2 oz(4 T.) unsalted Butter
1 lb. bacon (rough chopped) (*tip: place slices of bacon in the freezer to make it easier to cut. Will slip less)
16 oz Chicken stock or vegetable stock
32 oz Heavy Whipping Cream
2 oz(1/4 cup) Flour
1 oz vegetable oil
Salt/ pepper to taste
* Small dice = ¼ in. x ¼ in.

Garnish with these items if desired:
Chives (chopped)
Bacon Bits
Sour Cream
Cheddar and Mozzarella Cheese (shredded)

Procedure:
1. Place stock pot, (6-8 quart pot) over medium heat. Add the vegetable oil, butter and bacon. Start rendering the bacon (process of releasing the fat through cooking). The bacon will start to release its fat. Do not allow it to burn.
2. Cook bacon till crispy, remove and set aside on a paper towel; leaving the fat from the bacon in the pan. Add onions, carrots, and celery. Traditionally these 3 items are called the MIREPOIX. Sweat the mirepoix until the onions turn translucent. Add potatoes and cook for 4 minutes. Add the flour to make roux. Cook roux until blond in color, (about 5 to 7 minutes), while stirring constantly. Add chicken stock and half of the bacon back into the pan. (Reserve the rest of the bacon for garnish.) Seasoned with salt and pepper.
3. Turn the heat to medium high, bring the soup up to a simmer and cook for 15 minutes or until the potatoes are soft and tender. Mash some of the potatoes for thicker, creamier texture. Add whipping cream and simmer for 5 minutes.
4. You can adjust the thickness by adding water or stock for a thinner soup. It should have a creamy consistency. Adjust your seasonings.
5. Garnish with your desired toppings.

Created by Sous Chef Mhike Hugo

My tips- In step 2 it says to add potatoes to mirepoix before making the roux. I have never tried to make a roux with potatos in it so I made the roux with the mirepoix and added the potatoes later. It seems to me the potatoes would just "hold on to" the flour.
I also needed more chicken broth than was called for. It was too thick to come to a simmer very well. I find cooking it longer at a little lower temp is better also.

I just put bacon on my shopping list because I'm out.

I gotta tell ya, I've been cooking up a bunch of french dishes lately. Most of them start with cooking bacon "Lardones", removing them, and cooking onion in the bacon fat and putting the lardones back in the dish. The flavor and silkiness the bacon adds is amazing. It's usually only a few slices into a big dish that also uses olive oil as the rest of the fat, so it's not all that unhealthy. ;)

The first thing you need to make the sourdough pancakes is the sourdough starter. You usually get this from a friend or neighbor, though there are ways to make it from scratch (some recipes even cheat and add lemon juice! ). But keep in mind that sourdough is a live culture and needs to be cared for constantly.

I found that after making sourdough pancakes from scratch for over 10 years, I liked Aunt Jamima even better, and it was a whole lot easier.

Lack of bacony goodness will be the downfall of the supposed bacon sandwich with chicken bread otherwise known as the Double Down. Note to self: If a fast food item does not have bacon in the name (e.g., Bacon Double Cheeseburger), do not expect the inclusion of bacon to impart the proper bacony goodness.

Last night - for the second time in a week - I had the asparagus with bacon at Forage in Silver Lake. It is the most wonderfully bacon-y side I've had in a long time. Yum.

What would one have to have done to win the "Never Again Award?"

"Never Again" is a phrase associated with educating people about the Holocaust. So I imagine he educated people about the Holocaust.

I keep reading the caption and thinking, "Mmmm, bacon ray."

Then it can become a performance art piece while we see how long it take for the entire pile to be consumed.

Well, there's always next year.

There should be a LoT delegation.

Stumbled across this while looking up something else. I recommend this person (http://en.wikipedia.org/wiki/Tilman_Parks)be adopted as the Official Deceased Congressman of LoT.

Alex
05-30-2010, 03:35 PM
That seems a little obvious. I'd go with Francis Bacon as LoT's Official Lord Chancellor.

For official philosopher I'd sugguest the Francis[can Roger] Bacon.

And while we're at it I nominate Yehuda Bacon (http://en.wikipedia.org/wiki/Yehuda_Bacon) as LoT's Official Oxymoron in that he's Jewish Bacon.
