Last night the world's cutest grandson and his parents were over for dinner. WCG was being fed the last spoonful of his cereal and he wasn't as hungry or interested as he'd been so I suggested it needed some bacon. WCG froze and stared at me transfixed as if I'd just uttered the magic word.

From my favorite cookbook, Staff Meals from Chanterelle by David Waltuck: "When restaurants use bacon, they generally need to cook a lot of it. Instead of frying it in a pan on top of the stove, professional cooks lay the bacon strips in a sheet pan (you could also use a rimmed baking sheet, such as a jelly-roll pan) and bake in a preheated 350 oven until crisp, 15 to 20 minutes. Drain on paper towels before using. The bacon strips will curl up very little, if at all; they usually come out good and flat, which makes them easier to use."

And while we're on the subject, how about a post-Bastille Day Aioli BLT?

Yes, a sheet pan is easiest for large quantities, IMO. (Heck, I even use it for just Jason and me.)

If you like curly bacon, you can always take foil and make ridges for your bacon to sit upon.

However, I am persnickety and like to flip my bacon over so it gets even crispiness, so the foil thing gets annoying to me.

agreed. also the nice thing about makin' bacon in the oven is you can treat it to some very interesting add ons. from as simple as freshly ground pepper to a light glaze of maple syrup, garlic powder etc. something youre hard pressed to do in a fry pan

I put mine on a non-stick baking cooling rack in the sheet pan - that keeps it out of the fat while it cooks.

The Texas Turtle Burger...



Here’s a Summer Cookout idea.

½ pound handmade ground beef patties, topped with sharp cheddar cheese, wrapped in a bacon weave, then the next step, add hotdogs as the heads, legs and tail. Place on an oven rack, covered loosely with foil and baked for 20-30 minutes at 400 degrees. A little crispy, not too crunchy...just how a turtle should be, no?






One has to wonder what one should use for a bun ...

Shhh, don't tell him! We actually went to the butcher a couple towns over and they don't carry such a thing :rolleyes: The only brisket they had was 5 pounds, not quite what he had in mind.

I found him a 12 pound brisket up in Salem but no pork belly there either.

So someday when he has the time he can look around Portland before he heads home. He actually saw a Gartners ad this weekend and said he'd go there. I know him though and he hates to shop so I suspect I have little while before he does.

Then again, every weekend he's out there smoking something, in the smoker this time, and having a good old time.

This weekend we did pork loin. I made my half kaulua pork and he did some apple juice marinade. We shredded them both up and Yummm!

I kind of thought it was crazy that they couldn't order what we wanted too!

The boy looked at me tonight and asked if we had something nonpork to eat. He had little brisket sandwiches. I guess I'll do pork but I can't decide between the kaulua, which I'd need to make rice for, or just having some of the bbq sauced up apple pork. Hmmm..... choices and ones I like for once!

The bacon mac & cheese at the Swank Bar last night was disappointing, imo. This, after we got the chef's ok to have it special made for our party, since the restaurant was closed for a private function (and hence, not running their usual menu). AND after we raved about it so much, and over-confidently ordered six servings.

They got eaten, and people seemed to like it. But it was really meh compared to how it was last month.


Bacony let-down. :(

In Montreal we ate poutine with bacon..... yummy. Poutine is a Quebec "culture" food and can be found at lots of restaurants. Basically, it's french fries topped with gravy and cheese curds (and in our case, bacon as well). I'll have to post a photo as soon as I get it online (even though it looks gross lol).

My brother is a mega carnivore. So when my mom asked him what he wanted to eat for our dinner in celebration of him passing his Physical Therapy Certification, he said, "I want those turtle burger (http://www.loungeoftomorrow.com/LoT/showthread.php?p=330116&post330116) things. SzczerbiakManiac* knows about them, ask him." So yesterday I got a call from my mom asking me about the "turtles" I made. The first thing that popped into my mind was peanut, caramel, and chocolate clusters which I have never made in my life—I make brownies & cookies—so I was confused. But then she said, "You know, the burger patties with hot dogs and bacon." Of course I then knew to what she was referring. So I sent her the link and she said she'd get the ingredients and we'd have them on Sunday (today).

Well let me tell you, they were fücking awesome! Everyone in attendance, without exception, absolutely raved about them. Even my mom, who is an RN, was rolling her eyes all through the preparation process about how awful these were for us and mildly complained that they were a pain to make (they are pretty labor intensive) was suggesting we make this a tradition by the time dinner was over because they were so good.

We didn't cook them covered, as suggested in the recipe, and they took a lot longer to cook. Additionally, we wanted the bacon crisped up, so we finished them under the broiler for a couple minutes which made the bacon turn out really nice.

CP bought the makings of gazpacho, my mom's recipe (which I still like better than any gazpacho I've had, even in Spain). Her recipe calls for beef bullion.

I couldn't find beef bullion in the pantry. I found, in order:

Chicken bullion - eh, not hearty enough to substitute

Vegetable bullion - seems redundant

[I bet you can guess where this is going]

bacon bullion - ding ding ding ding ding ding!

Admittedly, I kinda stopped looking very hard for the beef after that discovery.

I'll let you know how it turns out, chilling at the moment.

OK now this is the most hilarious bacon thing EVER.

This (http://www.foodnetwork.com/recipes/rachael-ray/late-night-bacon-recipe/index.html) is from the Food Network Site, a recipe for "late night bacon" supplied by none other than Rachael Ray!

Ingredients

* 8 slices bacon

Directions

Place 2 sheets of paper towel on a microwave safe plate, lay the bacon out on the paper towel not over lapping the slices. Place 2 more sheets of paper towel on top. Place in the microwave on high for 6 to 13 minutes.

OK so that is the stupidest, most obvious bacon "recipe" ever. But the best thing is the comments (http://www.foodnetwork.com/recipes/rachael-ray/late-night-bacon-recipe/reviews/index.html), such as:

This is one of my favorite recipes, except I use tin foil instead of paper towel in the microwave. Also, I usually leave the microwave door open while I cook it so that I can watch the savory goodness up close.

I went to a very sub par italian restaurant for lunch today. Someone at the table ordered a prosciutto and mozzarella appetizer.

What came out was a weird dark brown lump surrounded by marinara sauce. We all looked a little puzzled. The waitress (who was either not on her game the whole time, or had no game to be on) said, "It's cheese wrapped in bacon."

Sadly, the worst part wasn't that she simply though one could replace the word "prosciutto" with the word "bacon". The worst part was that the 'chef' seemed to think he could replace the meat 'bacon' with the meat 'prosciutto'. The reason for the confusing brown lump was that the prosciutto had been cooked like bacon. And what may have once been a lovely hunk of fresh mozzarella had been unceremoniously melted. The whole thing was an offense to what that dish should have been.

There is a restaurant in Anaheim Hills called Slater's 50/50 (http://www.slaters5050.com) that (among other things) appears to be a bacon gastronomist's delight.

Their signature 50/50 burger patty (which you can get served a gazillion different ways) is 50% ground beef and 50% ground bacon - and you can get your patty up to 1 lb. AFTER cooking. You can also have baconnaise sauce and extra slices of bacon added. Pair it with a Bacon Shake and then have a Bacon Brownie for dessert.

They have a cardiac unit around the side of the restaurant...

After seeing this post, I thought this would be a fun place to try for my birthday lunch with my parents. It's sort of half way between us which was a bonus.

My husband and I each ordered a burger - cut in half - and we shared. We ordered a 50 50 burger - their signature burger which was spicy and delicious. We also got a custom burger that was all beef and had bacon, pinapple, teryaki, lettuce and swiss. My husband liked that one better and I liked the 50 50 better.

All together we ordered a 5 combo appetizer and tried them all. The artichokes were really delish and went well with the sage mayo dipping sauce. Pickles interesting - but I'm not a huge dill pickle fan. Sweet potato fries were good and what I'd read online was to dip them in the pumpkin sauce. I love pumpkin but just couldn't get behind a savory version of it.

My husband enjoyed a beer - he was disappointed he wasn't able to get the Panagea beer from dogfishhead that he'd seen on their website but wasn't in stock when he ordered it. Oddly enough they poured him a different beer and tried to take the bottle. When he asked to read the bottle (he's a beer brewer and bottles have some fun/interesting info) and noticed it wasn't what he'd ordered, they confessed to not having Panagea. He still enjoyed the beer they had subbed it with however so there was no love lost.

Right as we were leaving the turned the volume way up on one of the games playing and that bothered me a bit - but we were wrapping it up so it didn't really matter.

Had lunch yesterday from the Baconmania food truck. Trio of bacon balls, which were 3 beautiful crispy balls of bacon, one filled with steak and blue cheese, one filled with mac and cheese, one filled with a small PB&J sandwich. HEAVEN

I made pizza with proscuitto,it's bacon right, and smoked gouda. It was delicious and even the boy ate it. He has declared that smoked gouda is da bomb! Which is hilarious from the boy who wouldn't eat cheese just a year ago!

I made corn chowder for dinner last night. It was just okay but the bacon I sprinkled on top was delish.

I saw a pic somewhere online earlier of bacon cups. They were wound inside a muffin cup or flipped over on the back of the muffin cup for a larger version. once baked you could fill it with something. I think someone here needs to try this. I'm currently out of bacon.
